Should I be worried if my Grill food probe's ambient sensor doesn't match my cooker?

In most cases, built-in cooker thermometers measure the temperature in a different spot from where you put your food, like in the back of the oven or the lid of the grill. On top of this, there are usually hot and cold spots in the cooker, rather than having one consistent temperature throughout the whole chamber.
